Ingredients

4 servings of pasta, cooked al-dente
2 cups mushrooms (shiitake, cremini, etc.), sliced
2 shallots, chopped
3 tablespoons butter
1.5 tablespoons soy sauce
1 teaspoon dashi powder
0.5 teaspoon black pepper
1 cup cream or milk
Garnish: chives, Parmesan cheese

Instructions

1. Prepare pasta according to package instructions until al-dente; drain and set aside.
2. In a large frying pan over medium-high heat, sauté sliced mushrooms without oil for 2-3 minutes to enhance their flavor.
3. Add 2 tablespoons of butter, soy sauce, and chopped shallots; sauté until shallots are translucent (about 2-3 minutes).
4. Pour in cream or milk, black pepper, and dashi powder. Mix well and adjust salt to taste.
5. Simmer for 2 minutes, then add the cooked pasta. Mix thoroughly and cook on high heat for 1-2 minutes to allow the pasta to absorb the sauce.
6. Finish with an additional tablespoon of butter and fresh chives; garnish with Parmesan cheese for extra creaminess.

Notes

Trader Joe’s Gigli Pasta is used here but various noodles can also be incorporated. For vegetarian options, swap dashi powder with miso paste to maintain umami flavor.
